4. Advent &

Ja, jetzt habe ich die selbst auferlegten Fesseln etwas sehr überdehnt, also nun erst der nachgetragene Sonntagsbericht. Da angeblich das Geflügel bei einem örtlichen Händler besonders gut sei sollte (war es), hatte ich also ein Stück Hähnchenbrust (eigentlich nur ein Hähnchen ohne Keulen und Flügel) und eine Putenbrust käuflich erworben, wollte dann aber beides zwar getrennt, aber doch bei gleicher Gelegenheit zubereiten.


Die Bilder sind gruselig, ich weiß und die Hähnchenbrust folgte eigentlich einem alten Stiefel - Hähnchenbrust auf Zwiebeln mit Oregano, Thymian & Rosmarin, gewürzt mit Paprika (das war neu und erst spät bitte!) Pfeffer & Salz, die Sauce vom Bratenfond mit Sahne zubereitet, nett, aber *gähn.


Der gute Urs aus Zürich wies mich darauf hin, Pute sei eher trocken. Für seinen Vorschlag fehlten mir an einem Sonnabendabend die Zutaten teilweise, aber er brachte mich auf eine Idee:
Putenbrust auf einem Bett von Boskoop-Äpfeln und Zwiebeln (auch gepfeffert und gesalzen natürlich). Es war ziemlich viel davon, also war das Ding eher gut eingepackt. Ach so, beides wurde gebraten auf Butterschmalz, die Pute bekam zusätzlich Wallnußöl, das hat die Süße der Äpfel etwas ausbalanciert. Beides mußte natürlich regelmäßig übergossen werden und das Ergebnis war, im 2. Fall jedenfalls, wirklich beeindruckend. Dazu noch Bohnen mir brauner Butter, nur der Vollständigkeit halber.


Indeed I overstretched the self invented shackles a bit this time, so a belated Sunday dish report. Since I heard the poultry from a local dealer was very good, supposedly (it was), I've bought a piece of chicken breast (really just a chicken without legs and wings) and a turkey breast, and wanted to prepare it separate, but at the same time. The chicken breast was prepared in a well known manner - with onion, oregano, thyme, rosemary, spiced with paprika (which was new and add it late please!), salt & pepper, the sauce from the gravy made with cream, nice, but *yawn. The good Urs from Zurich pointed out to me, turkey would be rather dry, for his proposal some ingredients failed on a Saturday evening, but he gave me an idea: Turkey breast on a bed of Boskoop apples and onions (also salted and peppered, of course). A lot of it, so the thing was wrapped up rather well. Oh and both were fried in butter, the turkey got also some walnut oil, which balanced the sweetness of the apples slightly. Both of course had to be doused regularly and the result was, in the second case at least, simply impressive. There were beans with brown butter as well, just for completeness.

Es scheint, als ob ich meine Vorurteile überwinden und mich wieder einmal an Trutenbrust wagen sollte.

It all looks good, even if the gravy wasn't exciting.

And I think it's good that you got the advice from Urs. Once I tried roasting a turkey thigh, and it was much drier than when it is the whole turkey is roasted. I have no doubt the same thing would happen to a breast.
